Chocolate Chip Cookies

Wet Ingredients

  • 1 egg

  • 1/4 cup butter, melted

  • 1/4 cup maple syrup

  • 1/2 cup coconut sugar

  • 2 tsp vanilla extract

  • 1/4 cup Zen Basil Seeds

Dry Ingredients

  • 1 1/2 cups almond flour

  • 3/4 cup tapioca flour (to make chewy)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a bowl, mix together all wet ingredients. Let sit for a few minutes to allow the basil seeds to slightly hydrate.

  3. Add almond flour, tapioca flour, baking soda, salt, and cinnamon. Mix until a cookie dough forms.

  4. Fold in chocolate chips if desired.

  5. Scoop dough onto baking sheet and gently flatten.

  6. Bake for 10–12 minutes, or until edges are lightly golden.

  7. Let cool slightly before serving.
