Ingredients:
2 scoops Zen Basil Biohack Protein Mix
½ cup unsalted butter, browned
¼ cup monk fruit sweetener (or sweetener of choice)
¼ cup honey or maple syrup
1 tsp vanilla extract
1 cup blanched almond flour
3 tbsp coconut flour
½ tsp baking soda
½ tsp salt
1 large egg
1 large egg yolk
¾ cup sugar-free semi-sweet chocolate chips
Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Brown the butter:
Melt butter in a saucepan over medium-low heat. Stir constantly for 5–7 minutes until it turns golden with brown specks and a nutty aroma. Remove from heat and transfer to a heat-safe bowl. Let cool for 5–10 minutes.Mix wet ingredients:
Add monk fruit sweetener, honey (or maple syrup), and vanilla to the browned butter. Stir well.Combine dry ingredients:
In a separate bowl, whisk together almond flour, coconut flour, Zen Basil Biohack Protein mix, baking soda, and salt.Bring it all together:
Add dry mixture into the wet and stir until a crumbly dough forms. Add in the egg and egg yolk and mix until fully combined. Fold in chocolate chips.Shape cookies:
Scoop 1-inch balls of dough and place 2 inches apart on the prepared sheet. Use slightly damp fingers to flatten and smooth each ball.Bake:
Bake for 9–11 minutes or until the edges are golden and centers are just set. Let cool on the sheet for 5 minutes before transferring to a wire rack.
